Fig Cake
Back Home Up

This is an old Cajun recipe. Both my mother and grandmother use to make this for special occasions such as Christmas. They didn’t use the pecans, but I like the taste they add.

Ingredients

2 eggs

2 cups pecans, chopped

1-teaspoon soda, dissolved

1 cup sugar

1 teaspoon vanilla extract in 1 cup coffee (liquid)

1 ½ cups cooking oil

2 cups preserved figs, cut in pieces

4 cups flour

1-cup raisins (optional)

1-cup syrup (Mom always used Maple)

Directions

Stir soda into the cup of coffee and set aside. Place the oil in a large mixing bowl. Add the eggs, one at a time, then the sugar, syrup and vanilla. Blend together. Add the sifted flour, a little at a time until all has been mixed into the batter. Blend in the nuts, raisins, and figs and the coffee-soda. Pour into two square pans which have been greased and floured and bake at 350-degrees for 1 hour.
