This is an old Cajun recipe.
Both my mother and grandmother use to make this for special occasions such as
Christmas. They didn’t use the pecans, but I like the taste they add. Ingredients
2 eggs 2 cups pecans, chopped 1-teaspoon soda, dissolved 1 cup sugar 1 teaspoon vanilla extract in 1 cup coffee (liquid) 1 ½ cups cooking oil 2 cups preserved figs, cut in pieces 4 cups flour 1-cup raisins (optional) 1-cup syrup (Mom always used
Maple) Directions
Stir soda into the cup of coffee and set aside. Place the oil in a large mixing bowl. Add the eggs, one at a time, then the sugar, syrup and vanilla. Blend together. Add the sifted flour, a little at a time until all has been mixed into the batter. Blend in the nuts, raisins, and figs and the coffee-soda. Pour into two square pans which have been greased and floured and bake at 350-degrees for 1 hour. |
